Elnatan is a non-profit organization promoting self-sufficiency for local residents in various African countries. This project describes their effort to establish a fruit drying facility in Cape Provence, South Africa. They have introduced Solar Tunnel Dryers (STD), which are weather protected food dehydration tunnels that dry food economically and hygienically. Fruit leather is created by first shredding the fresh fruit into a pulp, and then spreading it in large evaporative trays. Manufacturing in this way, allows for the preservation of fruit products that would otherwise spoil too quickly for practical and profitable marketing. In turn, this has provided another reliable commercial venture for the local population.
